This coffee was introduced to us by Prism Coffee Works, a roaster in Korea, using an unusual refining method. ◎About Chiloso This is a new variety grown mainly in the Antioquia region. It is not yet as widely known as other common coffee varieties, but it is gradually gaining popularity as a variety with unique characteristics. ◎Refining Method Washed Long Fermentation Only the ripe cherries of this chiloso are collected and fermented in a tank filled with water for 172 hours. The cherries are then washed and dried in a dryer and a sundryer in parallel.
